Tomato and mushroom sauce that goes great with perfectly cooked pasta

Recipe

  • Sauté one clove garlic and 3 sliced shallots in olive oil
  • Add 1-2 cups sliced mushrooms and sauté for 4 minutes
  • Add 1/2 bottle dry white wine and 2 pints of cherry or pear tomatoes
  • Bring pan or pot to high heat and cook until the tomatoes are soft to the touch.
  • Add 1/4 bunch chopped basil
  • Add 4 ounces while butter
  • Season with salt and pepper and serve with your favorite pasta
