Tomatoes and Sweet August corn with purple basil!

For the last two weeks of August, nature is doing all the work to create magic! This time of the year, I dream about our local corn and tomatoes in Columbia County! This simple cool salad will Wow your family and friends.

Feeds 8-12 people

Ingredients

  • 12 ears shucked corn
  • 3 pounds assorted sweet cherry and pear tomatoes
  • 4 ounces extra virgin olive oil
  • Sea salt and fresh cracked pepper to taste
  • 3 ounces of Italian and or purple basil-

Method

  • shuck corn and sauté in olive oil for about 2 minutes.
  • add basil, s and p and cook until the basil wilts (about 20 seconds)
  • take corn mixture and spread out on a cookie tray and let cool-

(This will quickly cool down the corn and prevent its internal heat from continuing it to cook)

The cooling process~

Once the corn is cool, toss the tomatoes into the mixture in a bowl and season again with salt, pepper and extra virgin olive oil!
