Ingredients

• 1 pound sliced smoked bacon– render bacon in a pan until the bacon is crispy.
• 3 pounds organic carrots, washed, but not peeled. Cut the bases off, but no the stems
• 2 Pounds small with turnips (this time of the year, since they are so tender, they do not need to be peeled, Just remove both end with a pairing knife)
• 1 pound quartered sweet with peeled onions
• 5 ounces Maple Syrup
• Sea salt and fresh cracked black pepper

Separate the fat from the crisp bacon pieces

Method

• Place all of the vegetables in a roasting pan (do not pile them on top of one another)
• Pour ½ of the bacon fat onto the veggies and then make sure they are all coated with the fat and season with salt and pepper.
• Place in a 375 degree pre-heated oven and roast for approx. 45 minutes or until the entire vegetable mixture is tender.
• Remove the veggies from the oven and place in a serving bow.
• Add the maple syrup and make sure the syrup coats all of the vegetables.
• Place the crisp bacon pieces on top as garnish and voila!!!!
