Ingredients

• 1 oz mint leaves
• 1 red onion
• 3 thinly sliced black radishes
• 1 pound peeled and sliced Jicama
• Salt and Pepper to taste
• The Juice of 2 limes
• 1 pinch of crushed red pepper flakes
• Optional (orange segments from 3 oranges)
• Optional (2 ounces toasted almonds)

Method

• Peel and slice red onion into 1/4″ slices.
• Coat the onion slices in olive oil and sear in a hot cast iron pan until they turn brown.
• Place in a separate bowl and cover with plastic wrap.
• This will help the onions get more tender from their internal heat.
• Place all other ingredients in a separate bowl and toss-
• Add onions and other mentioned optional ingredients and serve.
• Goes great with BBQ chicken!
