Healthy salad of roasted bread, pear, cheese, egg, green leaf lettuce and lemon vinaigrette~

What do you do with day old bread? You can certainly feed it to the birds, throw it in the garbage, or make a delicious, healthy salad with it.

Feeds 4 people

Ingredients

  • 1 pounds cubed day old bread
  • X Virgin Olive oil
  • Sea salt to taste
  • Cracked Black Pepper to taste
  • 1 tsp dried red peppers
  • 3 hard boiled eggs
  • 4 ounces grated Pecorino cheese
  • 2 diced ripe pears
  • 1 head leafy green or red lettuce
  • The juice of 1 lemon

Method

  • Place diced bread on a cookie tray and coat with olive oil, salt, pepper and dried red peppers.
  • Put the bread in a pre-heated oven at 350 degrees and toast for about 7-8 minutes.

You want the bread to be hot and chewy, not crispy, through and through.

  • In a small bowl. Make your vinaigrette- 3 parts olive oil, 1 part lemon juice and salt and pepper to taste.
  • Take all of your other ingredients (minus the bread) and place in a large bowl and toss together.
  • Add the vinaigrette and then place warm bread on top of the salad and serve-
