Garlic Scapes, Baby Bog Choy with Pickled ginger, soy and sweet chili sauce

Garlic Scapes were everywhere at the Hudson Farmer’s market this past weekend. Here is a delicious way to prepare them- Garlic Scapes, Baby Bog Choy with Pickled ginger, soy and sweet chili sauce

Ingredients

  • 8 Ounces Garlic Scapes
  • 1 bunch Baby Bok Choy
  • 4 ounces pickled ginger sliced into match stick pieces
  • 3 ounces soy sauce
  • 4 ounces sweet chili sauce
  • 2 ounces olive oil
  • Salt and Pepper to taste

Method

  • cut the bottom of the scapes, about 1/8 of an inch. Soak scapes in cold water. Remove the scapes from the water and discard the dirty water. Repeat the process until the scapes until they are dirt free.
  • do the same process for the bok choy
  • cut scapes into 5’ lengths
  • preheat sauté pan with olive oil
  • stir fry the scapes for 2 minutes
  • add the bok choy and sauté until the bok choy gets wilted
  • add soy, sweet chili sauce, ginger, and salt and pepper
  • serve with your favorite meal
