About 4 years ago, one of my business partners, Laurent Tourondel and I went on a 5 day BBQ trip.
We went to Memphis, Kansas City, Charlotte, and Kansas and ate in 25 restaurants........I am amazed we made it through.
BBQ at 10 am until about 9pm every day for 5 days.
It was one of the most amazing trips I had ever been on!
We had a dream of opening a high end BBQ joint in NYC with amazing beers and a fantastic wine list in a well conceived dining room. Oh, great service and food too:)
Well, our BBQ joint never happened, but while we were planning, my dear friend Tom Valente of Ouest told me he was opening a BBQ project on 131st street and 12th avenue.
When he told me the location, I said it was the craziest thing I ever heard of.
Well, once again, he proved me wrong.....Dinosaur BBQ is a BBQ factory....always packed, always fun and great ribs too!
Whenever I am thinking about the pig, we head to Dinosaur Ribs.....
